Low Carb Chicken Enchilada’s (THM Friendly S)

As a busy homeschooling mom, it’s important to me to be able to feed my crew cheaply, and make it not only tasty, but lately, also a wee bit more healthier thanΒ I would normally go for. This meal fits that description perfectly and it’s slow cooker friendly too!

You will need:

  • 3 boneless, skinless chicken breasts, seasoned
  • 1/2 cup water or chicken broth (to cook it in)
  • Mission low carb tortilla’s (I use the small ones so I can have a couple of enchilada’s minus the guilt)
  • 1 lg can Enchilada sauce (or homemade. I have a new baby, hence canned πŸ˜‰
  • low fat mozzarella or cheddar cheese (shredded)
  1. Cook chicken in broth or water on high for 6 hrs or 8 hrs on low (shred when done)
  2. Layer cheese and chicken in tortilla’s. Roll and place in 9x13in. baking dish.
  3. Pour enchilada sauce over enchilada’s
  4. Sprinkle your choice of cheese and bake at 350F for 20 minutes, or until cheese melted and the enchilada’s are heated.

Serve with a side of lettuce, tomato, & a dollop of FF Greek Yogurt.

I do agree with this gentlemen’s comments. If we are under a portion of the law, we are under all. I believe Christ took care of that, not only with His resurrection, but with Matthew 22:36-40. I meet with like-minded Christians on the first day of the week in remembrance of our Lord, but He is with me every day of the week. Because of Romans 14:5, I do not look down upon those who choose to worship on Saturday. Thanks for the video and asking for opinions.

    Enchiladas are so delicious but are you sure you need 6hrs for chicken breasts? Cooking them in a frying pan with a lid on usually only takes around 25 minutes. Maybe marinate them overnight with the stock flavouring then just cook them for a shorter time and save money on your energy bill? Regardless, it still looks delicious, it’s been too long since I ate Enchiladas x

      You could definitely cook the chicken the way you said. Whatever works for you. πŸ™‚ Personally I have found that cooking them slow and easy over 6 hours results in super moist chicken which my family loves. I’ve found that it is a really easy and delicious healthy meal for mom’s who may have not been fully prepared that morning for that nights dinner. πŸ™‚

    I have a stupid question, but does 3 chicken breast refer to 3 halves? Thanks! Recipe looks delicious. I am striking out at making delicious food for the family that I can also eat!

      Yes, 3 chicken breasts would be the same as 3 halves. At least I think so. lol You can really use how much you want with this recipe. It’s super easy and def something you can eat with your family! Enjoy! πŸ™‚
