Oh how I love to eat. I do. *sigh* Food is one of my passions. If I can make it look good, taste good and be good for me I am a happy, happy girl! That’s what happens when I make this simple, yet delicious Taco Salad recipe. It’s SF, GF and THM friendly for all you Trim Healthy Mama’s. Another amazing thing about this recipe is that it’s so easy some of your kiddos could make it. Oh yeah!!
First lets make some Taco seasoning from scratch. If you’ve never made it before, don’t be intimidated. It’s super easy and way better for you than the packet stuff. Make a decent amount and store it for next time you’ll want it. I double the recipe below. Trust me, after having this taco’s will be on your dinner list often. Making your own taco seasoning and breaking away from store bought packets is freeing! 🙂
Plus, this recipe can be altered to your liking. So have fun with it! Here’s a starter for you.
1/2 cup Chili Powder
1/4 cup Onion Powder
1/8 cup Ground Cumin
1 Tbsp. Paprika
1 Tbsp. Sea Salt
*Three Tbsp. homemade Taco seasoning equals one 4 oz. package of Taco Seasoning mix. For Taco’s you would use approx. 3Tbsp. per. pound of meat*
What you’ll need:
This recipe makes enough for my family of 7.
2 lbs. ground meat
(I use lean ground turkey but you can use beef)
1 onion diced smal
1 clove of garlic chopped small
(this is optional. I love it with this though!)
6 Tbsp. Taco Seasoning
Salt and Pepper to taste
1. Brown your meat. Drain.
2. Add onions and garlic.
3. Add your seasonings now.
Taco Seasoning, salt and some pepper, if you like. I add Tony Cachere, garlic powder and black pepper.
4. Now you’ll want to add water.
You won’t want to go all crazy. Just add enough to be even with the meat. You won’t want to cover it. Keep it level. You want taco meat, not soup. 😉
5. Simmer for approx. 5 minutes or so.
Now you’re in business!
To make the Salad:
Get you some (that was the Cajun in me comin out;) shredded lettuce, diced tomatoes and shredded cheddar. If you’re not a THMer you can add a dollop of Sour Cream. If you are on THM this is an S and Satisfying it is!
P.S. don’t overdo your tomatoes since this is an S and tomatoes are carbs. 😉
