My hubby loves meatball sandwiches!
Me too, just not all the sugar in the sauce, or carbs and sugar in the bread. So I did what God has taught me to do best. I made it to fit my family. This particular day I woke up on the wrong side of the bed. I don’t exactly know what happened. Maybe it was the crying 1 year old throughout the night and my lack of sleep? Who knows. All I know is I was cranky and was on the verge of feeding my kids and hubby sugary cereal for dinner.
No matter what, I knew I needed to make something that was easy and yet made me feel full that night. Otherwise my hubby might be making a Cadbury chocolate run instead of me relishing in my Skinny protein chocolate. It was just that kind of day I tell you.

And you just can’t get easier than this ladies.
2 lbs lean ground turkey
(I use lean for everything. For meals like this it’s even happier because the fat will be cooking into the sauce and you don’t want too much fat even though this is an S)
(or a few sprinkles of dried onions)
1 large can of crushed tomatoes
Seasonings of your choice
(I use Garlic powder, Tony Cachere and for a slight sweet flavor I add just a wee bit of pure-white stevia)
1. Pour crushed tomatoes into a bowl and season to your liking.
2. Pour tomatoes into crock pot
3. Season meat and roll into little meat balls.
4. Put in crock pot/slow cooker on high for 6 hours or low for 8
(They may actually be done sooner than this depending on your slow cooker. They can sit and wait on you though. Isn’t that awesome! I rule that kitchen, meatballs, not you! hahaha I wonder if it means something that I tell my meatballs who’s boss? Hmm… moving on LOL)
Serve on a THM bread in a mug. I make mine in a small round Pyrex dish, let it cool a little. Cut it in half and then toast it. I add a sprinkle of mozzarella and some lettuce and it’s…
